Baked "Lovely Jubbly"
I've been keeping an eye out on various recipes in the couple of books I have from Jamie Oliver. I suddenly found myself with all the ingredients on hand, so I decided to whip up the dish for Baked Cod with Avocado, Shrimp, Cream and Cheese. It was quite easy to make (really no effort) and tasted pretty good despite its looks. Then again, I accidentally added a bit too much cream (that's what I get for eye-balling it), and it became a bit of a soupy mess. The basil added a nice fragrance to it while countering the heavier dairy components. This was almost like a gratinated seafood mix lightened up by the basil and avocado...though the avocado's creamy nature complemented the dairy without any heaviness. I enjoyed this dish with a side of mashed potatoes and just mixed everything together which turned out great. The potatoes just made wonderful use of the extra cream in there. ;)
